 Classic Meatloaf and Roasted Potatoes  Recipe 



Ingredients:


For the Meatloaf:

1 1/2 pounds ground beef 

1 cup breadcrumbs 

1 onion, finely chopped 

1 egg 

1/4 cup milk 

2 cloves garlic, minced 

1/4 cup ketchup, plus extra for topping 

1 teaspoon salt 

1/2 teaspoon black pepper 

1 teaspoon dried thyme 

For the Potatoes:

1 1/2 pounds small potatoes, halved 

2 tablespoons olive oil 

1 teaspoon paprika 

Salt and pepper, to taste 

Fresh parsley, chopped for garnish 


Instructions:


Preheat the Oven:


Heat your oven to 375°F (190°C).


Mix the Meatloaf:


In a big bowl, combine all meatloaf ingredients. Mix well and shape into a loaf on a baking sheet with parchment.


Prepare the Potatoes:


In another bowl, toss potatoes with olive oil, paprika, salt, and pepper.


Bake Together:


Arrange potatoes around the meatloaf on the baking sheet. Bake for about 55-60 minutes, halfway through, glaze the meatloaf with more ketchup.


Garnish and Serve:


Let rest for 10 minutes, garnish potatoes with parsley, slice the meatloaf, and serve warm. 🍽️
