French Onion Meatloaf
Ingredients:
2 pounds ground beef
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 cup beef broth
1/2 cup breadcrumbs
1/2 cup grated Gruyere cheese
2 eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized, about 20-25 minutes. Add beef broth and cook until reduced by half. Remove from heat and let cool.
In a large bowl, combine ground beef, breadcrumbs, Gruyere cheese, eggs, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.
Stir in the cooled caramelized onions.
Shape the mixture into a loaf and place it in a greased baking dish.
Bake for 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
