 Chicken Ricotta Meatballs with Spinach Alfredo Sauce 


Ingredients:


1 lb ground chicken

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1/2 cup breadcrumbs

1 egg

2 cloves garlic, minced

Salt and pepper to taste

2 cups heavy cream

1/2 cup grated Parmesan cheese (for sauce)

1 cup fresh spinach (for sauce)

Olive oil for cooking


Instructions:


Preheat oven to 400°F (200°C).

In a bowl, mix ground chicken, ricotta, 1/4 cup Parmesan, chopped spinach, breadcrumbs, egg, garlic, salt, and pepper.

Form mixture into meatballs and place on a baking sheet.

Bake for 20-25 minutes until cooked through.

In a skillet, heat olive oil, then add heavy cream and bring to a simmer.

Stir in 1/2 cup Parmesan and spinach until melted and creamy.

Add cooked meatballs to the sauce and toss gently.

Notes:


Substitute ground turkey for chicken if desired.
