Crispy Chilli Chicken
Ingredients:
1 lb chicken breast, cut into bite-sized pieces
1/2 cup cornstarch
1 egg, beaten
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vegetable oil (for frying)
1 tbsp garlic, minced
1 tbsp ginger, minced
1/2 cup bell peppers, chopped
1/4 cup onions, chopped
2 tbsp soy sauce
2 tbsp ketchup
1 tbsp chili sauce (adjust to taste)
1 tsp sugar
1/4 cup water
Green onions (for garnish)
Directions:
In a bowl, season chicken pieces with salt and pepper. Coat with beaten egg, then toss in cornstarch to coat evenly.
Heat oil in a skillet over medium-high heat. Fry the chicken pieces until golden and crispy, about 5-6 minutes. Remove and set aside.
In the same pan, leave a little oil and sauté garlic and ginger until fragrant, about 1 minute.
Add bell peppers and onions. Stir-fry for 2-3 minutes until they start to soften.
In a small bowl, mix soy sauce, ketchup, chili sauce, sugar, and water. Pour this sauce mixture into the pan.
Stir well and let the sauce simmer for 2-3 minutes, until slightly thickened.
Add the crispy chicken back into the pan, tossing to coat in the sauce.
Garnish with chopped green onions and serve hot.
