Stuffed Mushroom Dip
Ingredients:
1 lb fresh mushrooms, chopped
1 small onion, diced
2 garlic cloves, minced
8 oz cream cheese, softened
½ cup grated Parmesan cheese
1 cup shredded mozzarella
2 tbsp olive oil
Salt and pepper, to taste
1 tsp thyme
½ tsp paprika
Crackers or bread for serving
Directions:
Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Sauté onions until translucent, about 3 minutes.
Add mushrooms and garlic, cooking until the mushrooms are tender and most of the liquid evaporates, around 7-8 minutes.
Stir in thyme, paprika, salt, and pepper. Remove from heat and let cool slightly.
In a mixing bowl, combine cream cheese, Parmesan, and half of the mozzarella.
Fold in the cooled mushroom mixture.
Transfer to a baking dish, top with the remaining mozzarella, and bake for 20 minutes or until bubbly and golden on top.
Serve warm with crackers or bread and enjoy!
