Zesty Orange Dream Cake
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 tablespoons orange zest
3/4 cup unsalted butter, softened
3 large eggs
1/2 cup whole milk
1/4 cup freshly squeezed orange juice
1 teaspoon vanilla extract
1 cup chopped orange segments
Glaze:
1 cup powdered
sugar
2 tablespoons freshly squeezed orange juice
1 tablespoon orange zest
Directions:
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, combine the granulated sugar and orange zest. Rub the zest into the sugar until fragrant.
Add the butter to the sugar mixture and beat until light and fluffy.
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Mix in the milk, orange juice, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the chopped orange segments.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
To make the glaze, whisk together the powdered sugar, orange juice, and orange zest until smooth. Drizzle over the cooled loaf.
