Pecan Pie Cobbler
A perfect blend of gooey pecan pie goodness with a soft and buttery cobbler topping. Ideal for any festive gathering or a cozy dessert at home!
Ingredients:
For the Topping:
• 1 cup all-purpose flour
• 1/2 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 cup milk
• 1/4 cup unsalted butter, melted
For the Filling:
• 1 cup light corn syrup
• 1/2 cup packed brown sugar
• 3 large eggs
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
• 2 cups chopped pecans
• 1 cup boiling water
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. Prepare the topping: In a bowl, mix together the flour, granulated sugar, and baking powder. Add the milk and melted butter, stirring until just combined. Set aside.
3. Prepare the filling: In another bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and salt until well combined. Stir in the chopped pecans.
4. Assemble the cobbler: Pour the pecan mixture into the greased baking dish. Spoon the topping batter over the pecan filling.
5. Add boiling water: Carefully pour the boiling water over the batter and pecan mixture—don’t stir.
6. Bake: Place in the preheated oven and bake for 45-50 minutes, or until the top is golden and the filling is bubbling.
7. Cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
