Red Snapper, Shrimp & Grits with a Cajun and Cream Sauce
Ingredients:
For the Grits:
1 cup stone-ground grits
4 cups water
1 cup milk
1/4 cup butter
Salt to taste
For the Red Snapper & Shrimp:
2 red snapper fillets
1/2 lb large shrimp, peeled and deveined
2 tbsp Cajun seasoning
2 tbsp olive oil
Salt and pepper to taste
For the Cajun Cream Sauce:
1 tbsp butter
1 clove garlic, minced
1 cup heavy cream
1 tbsp Cajun seasoning
1/4 cup Parmesan cheese, grated
1 tbsp fresh parsley, chopped (for garnish)
Instructions:
Cook the Grits: Bring water to a boil in a large pot. Stir in grits and reduce heat to low. Cook, stirring occasionally, until thickened (20-25 minutes). Add milk, butter, and salt, stirring until creamy. Set aside.
Prepare the Red Snapper & Shrimp: Season red snapper fillets and shrimp with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear red snapper fillets, cooking for 3-4 minutes per side until cooked through. Remove and set aside. In the same skillet, cook the shrimp until pink (2-3 minutes per side).
Make the Cajun Cream Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant (about 1 minute). Stir in heavy cream, Cajun seasoning, and Parmesan cheese. Cook until the sauce thickens (3-4 minutes).
Assemble the Dish: Serve the grits in a bowl, topped with red snapper and shrimp. Drizzle with the Cajun cream sauce and garnish with fresh parsley.
Notes:
Adjust the amount of Cajun seasoning for desired spice level.
Serve with a side of sautéed greens for a complete meal.
