Lemon Loaf

Ingredients:
- 1 tablespoon lemon zest
- 2 large eggs
- 1/2 cup unsalted butter, softened

- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup milk (whole or 2%)
For the Lemon Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons fresh lemon juice
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.
2. In a medium bowl, combine the flour, baking powder, and salt. Set this dry mixture aside. In a larger bowl, beat the softened butter and granulated sugar together until it's light and fluffy.
3. Add the eggs one at a time, mixing well after each addition. Then, incorporate the lemon zest, lemon juice, and vanilla extract, mixing until fully blended.
